Italian Eggplant Parmesan

Eggplant parmesan is another easy Italian recipe. It tastes great when is cooked with cheese. Other ingredients that go into the eggplant parmesan are tomato sauce and mozzarella cheese. This is a very popular Italian vegetarian dish.
Ingredients
  Eggplant 1 , peeled
  Breadcrumbs 1 Cup (16 tbs)
  Eggs 2 , slightly beaten
  Parmesan cheese 3 Tablespoon
  Mozzarella 3 Tablespoon
  Spaghetti sauce 6 Tablespoon
Directions

1. Peel and slice eggplant. Dip the slices in egg and then into breadcrumbs.
2. Place the slices on a greased cookie sheet.
3. Bake the slices for 375 F for 20-25 minutes from each side.
4. Spread some spaghetti sauce in a baking dish and spread a layer of eggplant slices.
5. Top it with sauce, mozzarella and parmesan cheese.
6. Repeat the steps until all the eggplant slices are done.
7. Cover it with foil and bake for 15-20 minutes.
