This Stir Fried Fragrant Eggplant I had at one Chinese restaurant and I was floored . This Stir Fried Fragrant Eggplant is an unusual one which you can try on your free days. Do let me know the feedback.
Ingredients
  Dried black mushrooms 4
  Dried shrimp 1 Tablespoon
  Cooked chicken 1⁄2 Cup (8 tbs)
  Smoked ham 2 Tablespoon
  Bamboo shoots 1 Cup (16 tbs)
  Walnuts 2
  Almonds 6
  Peanuts 6
  Eggplant 1
  Frying oil 2 Cup (32 tbs)
  Soy sauce 2 Tablespoon
  Sherry 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄4 Teaspoon
  Oil 2 Tablespoon
Directions

1. Separately soak dried mushrooms and dried shrimp.
2. Dice cooked chicken, smoked ham, bamboo shoots, soaked mushrooms and shrimp.
3. Shell, blanch and coarsely chop walnuts and almonds. Halve the peanuts.
4. Peel eggplant and cut in 1/2 inch cubes. Then dredge lightly in cornstarch.
5. Heat oil and deep-fry eggplant cubes until golden. Drain on paper toweling.
6. Meanwhile combine soy sauce, sherry, salt and sugar in a cup.
7. Heat remaining oil. Add all diced ingredients. Stir-fry to heat through (about 2 minutes).
8. Return eggplant cubes. Add soy-sherry mixture and stir-fry 2 minutes more. Garnish with nutmeats and serve.
