Baked Eggplant Slices
|Eggplant||1 Medium, peeled and sliced in -1/2 inch (1.25 cm) thick slices|
|Mayonnaise||125 Milliliter (Unsweetened, 1/2 Cup)|
|Green onions||2 , chopped fine|
|Basil/Thyme||1⁄2 Teaspoon (2 Milliliter)|
|Cheddar cheese||125 Milliliter, grated (1/2 Cup)|
|Fine soda cracker crumbs||250 Milliliter (1 Cup)|
€¢ Place the eggplant slices on a large plate.
€¢ Sprinkle each slice generously with salt.
€¢ Let stand 20 minutes, then pat dry to remove the accumulated moisture.
€¢ Blend together the mayonnaise and the green onions, basil or thyme.
€¢ Butter both sides of each eggplant slice with this mixture.
€¢ Blend in a large plate the Cheddar and cracker crumbs. Dip each eggplant slice in it.
€¢ Place on a cookie sheet or in 2 pie plates.
€¢ Place on microwave oven rack.
€¢ Bake 20 minutes in convection part of microwave oven at 375°F (190°C).
