|Wheat germ||1⁄2 Cup (8 tbs)|
|Basil/Thyme / mixed herbs||1⁄4 Teaspoon|
|Eggplant||1 , sliced|
|Cheese||1⁄2 Cup (8 tbs), grated / sliced (As Per Choice)|
Preheat oven to 350 °F (175 °C).
Oil a cookie sheet.
On a plate, combine bread crumbs, wheat germ and seasonings.
In a bowl, beat eggs.
Dip in eggplant slices.
Dredge with seasoned bread crumbs.
Transfer to a cookie sheet.
Cook in oven 20 minutes.
Remove from oven.
Top with cheese.
Continue cooking until golden brown.
