Fried Eggplant

Ingredients
  Eggplant rounds 8 (1/2 inch thick)
  Whole wheat flour 1⁄4 Cup (4 tbs)
  Eggs 2 , beaten
  Bread crumbs 1⁄4 Cup (4 tbs)
  Peanut oil 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Cut each eggplant round into 4 triangles.
Dredge with flour.
Dip in beaten eggs.
Roll in bread crumbs.
In a skillet, heat oil.
Cook eggplant until golden brown.
Remove from skillet.
Drain on a paper towel.
Season with salt and pepper.
