Eggplant Patties

Ingredients
  Eggplant 1 Medium, peeled and cubed
  Coarsely crushed rich round crackers 1 1⁄4 Cup (20 tbs)
  Shredded sharp american cheese 1 1⁄4 Cup (20 tbs)
  Beaten eggs 2
  Snipped parsley 2 Tablespoon
  Sliced green onion 2 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Cooking oil 2 Tablespoon
Directions

In saucepan add eggplant to small amount of boiling water.
Cover; cook till tender, about 5 minutes.
Drain very well and mash.
Mix with crumbs, cheese, eggs, parsley, onion, garlic, salt, and pepper.
Shape into eight 3 inch patties.
In skillet heat oil.
Cook patties till golden, about 3 minutes per side.
