|Eggplant||1 Medium, peeled and cubed|
|Coarsely crushed rich round crackers||1 1⁄4 Cup (20 tbs)|
|Shredded sharp american cheese||1 1⁄4 Cup (20 tbs)|
|Snipped parsley||2 Tablespoon|
|Sliced green onion||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Cooking oil||2 Tablespoon|
In saucepan add eggplant to small amount of boiling water.
Cover; cook till tender, about 5 minutes.
Drain very well and mash.
Mix with crumbs, cheese, eggs, parsley, onion, garlic, salt, and pepper.
Shape into eight 3 inch patties.
In skillet heat oil.
Cook patties till golden, about 3 minutes per side.
