Eggnog Holiday Salad
|Canned fruit cocktail||1 Pound (1 Can)|
|Plain gelatin||1⁄2 Ounce (2 Envelopes, 1/4 Ounce Each)|
|Canned mandarin oranges||11 Ounce, cut in half (1 Can)|
|Flaked coconut||1 Cup (16 tbs)|
|Dairy eggnog||2 1⁄2 Cup (40 tbs)|
Drain fruit, saving juice.
Soften gelatin in juice and melt over hot water.
Combine with rest of ingredients.
Turn into 5-cup mold and chill until firm.
This is very good to serve from Thanksgiving to New Years when eggnog is available.
Has a delicious taste.
When serving at Christmastime, a few extra maraschino cherries cut in half may be added.
The extra red color makes it look more festive."
