Elegant Egg Nog
|Eggs||4 , separated|
|Sugar||1⁄2 Cup (8 tbs)|
|Milk||3 Cup (48 tbs)|
|Rum/Vanilla extract||1 Teaspoon|
Beat egg whites until foamy in 1-quart bowl.
Beat in 3 tablespoons sugar, 1 tablespoon at a time.
Continue beating until stiff and glossy.
Combine egg yolks, 1/2 cup sugar and salt in a 2-quart bowl.
Beat until thick and lemon-colored.
Stir in milk and rum or vanilla.
MICROWAVE 4 MINUTES on HIGH, or until mixture is hot but not boiling.
Carefully fold egg whites into milk mixture until well blended.
Fill serving cups 1/2 to 3/4 full.
Top with grated chocolate or nutmeg.
