Frozen Egg Nog Logs
|Pastry cream||2 Cup (32 tbs) (Omitting Almond Extract)|
|Rum extract||1 Teaspoon|
|Grated nutmeg||1⁄4 Teaspoon|
|Heavy cream||1 Cup (16 tbs), whipped|
|Chopped pecans||1 Cup (16 tbs)|
Cool Pastry Cream slightly.
Whisk in rum extract, if desired, and nutmeg.
Fold whipped cream into Pastry Cream.
Spoon mixture into 2 empty 20-ounce fruit or vegetable cans, or use 2 1-pound coffee cans, dividing the mixture between them. (It will not completely fill the coffee cans.) Cover with foil, and freeze at least overnight.
