Egg Sausage

Egg Sausage is a wholesome breakfast dish combination, especially popular in English, American, Australian and Scottish cuisines. This dish has many variations in the way it is prepared and the ingredients used. The most common ways of using egg and sausage are in the form of scramble, omelet, casserole, etc. Considered to be one of the most nutritious and healthy breakfast combination, egg and sausage are thoroughly enjoyed by people of all age groups depending on the way it is prepared.


Egg Sausage dishes are prepared with egg and sausage as the key ingredients. Other ingredients depend on the recipe. However, taking into consideration that the most common preparation of this dish is in the form of scramble, the ingredients are pork sausage, eggs, sliced green onions, diced green bell pepper, butter, milk, seeded and diced tomato, hot pepper sauce (optional), shredded cheddar cheese, salt and pepper.

Popular Egg Sausage Dishes

Egg Sausage scramble is prepared by browning sausages and setting aside. Meanwhile, bell peppers and green onions are sautéed and cooked till tender. Eggs are beaten; milk, salt and pepper are mixed into the beaten eggs and stirred in well. This egg-milk mixture is poured onto the sautéed vegetables and stirred till the eggs set partially. Cheese and sausage are added, mixed well and cooked till the eggs set well. However, it is ensured that the eggs do not dry. This breakfast dish is served hot, with tomato and pepper sauce.

Sausage & Egg Casserole –

Ingredients: Sausage (browned), eggs (beaten), cubes bread slices, shredded cheddar cheese, milk, salt and pepper.

Preparation: Cubed bread pieces are placed in a greased baking dish and sprinkled with sausage and cheese. Meanwhile, beaten eggs, milk, salt and pepper are mixed well and poured over the sausage & cheese topped bread cubes. The contents are baked till the eggs set. Once done, they are cut into squares and served hot.

Scotch Eggs – This is a popular Scottish snack dish that is also considered a picnic food.

Ingredients: Bulk Pork Sausage, Hard boiled eggs, eggs (beaten), flour, breadcrumbs and oil (for frying).

Preparation: Sausage is divided into small portions and flattened into patties. A hardboiled egg is placed in the middle of each patty and the sausage is wrapped around the egg. Eggs are beaten in a bowl and set aside. Flour and bread crumbs are kept in two separate bowls. Meanwhile, oil is heated. Sausage coated eggs are rolled in the flour, eggs and breadcrumbs, in the same sequence and deep fried till golden brown. This wonderful snack goes very well with a side salad. Herbs such as sage and parsley, Worcestershire sauce or curry powder are other ingredients that can be added to the sausage, to enhance the flavor of the snack.
