Eggs with Black Butter
|Clarified butter||1 Tablespoon|
|Wine vinegar||1 Tablespoon|
|Parsley||1 Teaspoon, finely chopped|
1.Multiply the quantities given by the number of persons to be served.
2.Poach the eggs in water to which a little vinegar has been added.
3.Remove while still soft and place in a dish in the oven to finish cooking.
4.Heat the vinegar until it is half its original quantity; then pour it over the eggs.
5.Simmer the butter for a few minutes in a pan.
6.Add parsley and continue cooking until both butter and parsley are browned.
7.Pour over eggs
8.Serve with slices of bread
