Eggs with Black Butter

Eggs with black butter is a simple and savory egg preparation that is best served as a side in meals or brunches. Prepared with clarified butter and vinegar, the eggs with black butter is herbed with parsley. With the sauce poured over eggs, its is a savory and delcious side that can be paired with any homely meal.
Ingredients
  Eggs 2 Small
  Clarified butter 1 Tablespoon
  Wine vinegar 1 Tablespoon
  Parsley 1 Teaspoon, finely chopped
Directions

MAKING
1.Multiply the quantities given by the number of persons to be served.
2.Poach the eggs in water to which a little vinegar has been added.
3.Remove while still soft and place in a dish in the oven to finish cooking.
4.Heat the vinegar until it is half its original quantity; then pour it over the eggs.
5.Simmer the butter for a few minutes in a pan.
6.Add parsley and continue cooking until both butter and parsley are browned.
7.Pour over eggs
SERVING
8.Serve with slices of bread
