Eggs with Codfish

Ingredients
  Salt codfish 1 Cup (16 tbs)
  Fat 4 Tablespoon
  Flour 2 Tablespoon
  Milk 2 Cup (32 tbs)
  Eggs 2 (Uncooked)
  Chopped parsley 1 Tablespoon
  Eggs 3 , hard cooked
Directions

GETTING READY
1.In a bowl of cold water, cover the fish and let it soak overnight
MAKING
2.Now drain, flake the fish
3.Then sauté fish with the fat in a pan for a few minutes
4.Now sprinkle with the flour, also add milk, and cook until smooth
5.Stir in the uncooked eggs, slightly beaten, and cook for 3 minutes more
SERVING
6.Serve on a platter garnished with the chopped parsley and the hard-cooked eggs cut in quarters
TIPS
Two additional tablespoons of flour may be substituted for the uncooked eggs, if desired. For creamed codfish, omit the hard cooked eggs.
