These Preserved Eggs make a tasty side course for your rice and noodle dishes ! Eat these Century Eggs as an hors d'eouvre also or in the Shanghai style with chilled Tofu ! Try a dish out with these Preserved Eggs and tell me which dish you liked best !
|Eggs||4 Small, preserved|
|Ginger||1 Tablespoon, chopped|
Remove the lime and shell from the eggs, being careful not to break them.
Wash in cold water.
Cut each egg into 6 pieces lengthwise.
Arrange on a dish and sprinkle with the vinegar and chopped ginger.
