Fried Eggs Romano
|Olive oil||2 Tablespoon|
|Onion||1 , peeled and thinly sliced|
|Green pepper||1 , seeded and cut into strips|
|Bacon slices||4 , cut into pieces|
Heat the oil in a saute pan, add onion, green pepper and bacon, and cook over medium heat until the onion is transparent.
Break the eggs into the pan carefully, cover with the lid of the pan or with foil and continue to cook for 2-3 minutes or until the eggs are just firm.
Add a dash of salt and pepper if desired.
Slide carefully on to a hot serving dish.
