Piquant Stuffed Eggs
|Tarragon vinegar||1 Teaspoon (Leveled)|
|Salt||1⁄4 Teaspoon (Leveled)|
|Minced onion||1⁄2 Teaspoon (Leveled)|
|Chili sauce||2 Tablespoon (Leveled)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
Mash the egg yolks, add the cooked and finely chopped bacon, the minced onion, the chili sauce, vinegar, salt, paprika, and enough mayonnaise to make a smooth paste.
Stuff the egg whites with this mixture.
These stuffed eggs may be served with salad greens as a salad, or added to Medium White Sauce and served on toast.
