You'll simply love this Poached Eggs With Chile-Cheese Sauce recipe. A rare combination of egg, chili, and cheese sauce; I bet, you would love to prepare this recipe again and again.
  Margarine 2 Teaspoon
  All purpose flour 2 Teaspoon
  Skim milk 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Paprika 1⁄8 Teaspoon
  Red pepper 1 Dash
  Extra sharp cheddar cheese 1 Ounce
  Chopped green chilies 2 Tablespoon
  Eggs 6
  Paprika To Taste
  Parsley 1

Melt margarine in a small saucepan over low heat.
Add flour, stirring until mixture is smooth.
Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
Stir in salt, paprika, red pepper, shredded cheese, and chopped green chiles,- remove from heat, and continue to stir until cheese melts.
Place each poached egg custard cups, and top with 1 tablespoon cheese sauce.
Sprinkle each serving wirh addtional paprika, and garnish wirh parsley sprigs.
Serve immediarely.
