A twist on deviled eggs, these eggs are overstuffed with filling to look like they are about to explode. Perfect for a spring buffet, Easter brunch, baby shower or an appetizer for any occasion.

Chopped cooked chicken | 1 Cup (16 tbs) , divided | |
Mayonnaise | 1 Tablespoon | |
Chopped coriander leaves | 1 Tablespoon | |
Oregano | 1 Dash | |

GETTING READY
1.Slice the eggs from the top and bottom and scoop out the yolks.
MAKING
2.Place the egg yolks in a bowl and smash with a muddler.
3.Gradually add in the mayonnaise to the yolk, 1 tablespoon at a time and mix well.
4.In a separate bowl, mix 1/4 cup of the chicken with coriander and oregano and stuff this into the eggs.
5.Using a piping bag with large tip attached, pipe the yolk mixture into the egg.
6.Sprinkle remaining chicken and garnish with oregano, chipotle and coriander leaf.
SERVING
7.Serve deviled eggs along with some condiment.
