Eggs Benedict

Ingredients
  Cooked ham slice 6
  Butter 1 Tablespoon
  English muffins 3
  Poached egg 6
  Freshly ground pepper To Taste
  Hollandaise sauce 1 Tablespoon
Directions

Trim ham slices so they are about the size of the english muffins.
Heat the 1 tbsp butter in large heavy skillet and drop in the ham slices.
Fry very lightlv.
Toast english muffin halves.
Apply butter over toast.
Top each half with a slice of ham, then a poached egg.
Grind a little pepper over each egg and top with some of the hollandaise sauce.
Serve immediately.
