MAKING
1) Cut and toast the English muffins.
2) Cut the plum into slices.
3) To assemble smear the brie on the hot toasted English muffins.
4) Top it with salami and then the sliced plum.
5) Lastly top it with the poached eggs.

SERVING
6) Spoon over the hollandaise sauce and serve.
