Pareve Knaidlach Passover

Ingredients
  Egg yolks 2
  Kosher salt 1⁄2 Teaspoon
  Egg whites 1 , stiffly beaten
  Matzo meal 1⁄2 Cup (8 tbs)
Directions

MAKING
1) In a bowl, using the electric beater, beat the egg yolks and salt till nice and thick
2) Fold in the egg white and then fold into the matzo meal
3) Place the mixture into the refrigerator to chill for an hour
4) Using moistened hands, shape the mixture into 1/2 inch balls
5) In salted water cook the balls for 20 minutes till the balls rise to the top
6) Drain off the water, and keep aside the balls

SERVING

7) Serve the balls in a meat soup or in a dairy soup
