Eggs Nicoise

Ingredients
  Hard-boiled eggs 6
  Canned anchovy fillets 2 Ounce (1 Can, 56 Gram)
  Unsalted butter 3 Ounce (75 Gram Or 6 Tablespoon)
  Freshly ground pepper To Taste
  French beans 1⁄2 Pound, cooked and cut into 2.5-cm / 1-inch pieces (225 Gram / 8 Ounce)
  Tomatoes 1 Pound, skinned, quartered and deseeded (225 Gram / 8 Ounce)
  Black olives 4 Ounce (100 Gram Or 1/2 Cup)
  Garlic flavored french dressing 1 Ounce
  Finely chopped fresh herbs 2 Teaspoon
  Thick mayonnaise 1⁄2 Pint (300 Milliliter Or 1/4 Cup)
  Cream/Top of milk 1 Teaspoon (Leveled)
Directions

GETTING READY
1. Start by cutting the eggs into half, and removing and sieveing the yolks

MAKING
2. In a bowl, place 6 anchovy fillets and mash the remainder egg yolks, also butter till mixture is smooth and season to taste, spoon the mixture back into the egg whites
3.In aserving dish, mix the beans, tomatoes and olives along with dressing to moisten the mixture, also arrange the eggs down the centre
4. In the dish, add the herbs to the mayonnaise and coat it with a little cream, spoon over the eggs to cover
5. Finally split the fillets in and arrange in a cross on each egg

SERVING
6. Serve with a sauce of your choice
