Spuma De Zambaione

Ingredients
  Egg yolks 4
  Sugar 4 Tablespoon
  Marsala wine 1⁄2 Cup (8 tbs)
  Heavy cream 2 Cup (32 tbs)
  Grated bittersweet chocolate 2 Ounce
Directions

GETTING READY
1)Prepare a double boiler,and in the inner bowl, whisk the egg yolks and sugar until creamed.
2)Pour in wine and whisk well or use the electric mixer on low speed.
3)Heat this mix continously until thickened to ribbon consistency.
4)Ensure that it does not boil.
5)Carefully remove the pan from heat and let it come to room temperature.
6)Whip the cream and fold it gently into the cooled mixture .
7)Add the grated chocolate, reserving some for garnish, and fold it into the mixture.

SERVING
8)Spoon into long stemmed glasses.
9)Now sprinkle the grated chocolate reserved for garnish.
