1 Carefully separate the yolk of the egg from the white.
2 In a bowl, mix the yolk of egg with the sugar.
3 In a pan, heat the milk and pour over the egg.
4 Strain the mixture and add your favorite flavouring.
5 In another bowl, whip up the egg white until frothy but not stiff.
6 Gradually stir into the warm custard.
7 Serve at once.
