Rancher Style Eggs

Ingredients
  Fried eggs 8
  Tortillas 8
  Tomatillos 12 , coarsely chopped
  Lard 5 Tablespoon
  Onion 1 , chopped
  Garlic 1 Clove (5 gm), chopped
  Coriander sprig 1 , chopped
  Hot chilies 2 , stemmed, seeded and chopped (Fresh)
  Salt To Taste
Directions

MAKING
1) Grind the tomatillos, garlic, coriander and chilies together with a mortar and pestle.
2) In a skillet, saute the onion in 2 tablespoons lard, until soft.
3) Stir in the tomatillo mixture and allow the sauce to simmer for 10 minutes.
4) In a pan, fry the tortillas in rest of the lard until they soften.
5) Drain the tortillas thoroughly and place them on a warmed platter.
6) Place a fried egg over each tortilla and pour the tomatillo sauce over the eggs.

SERVING
7) Serve the Rancher Style Eggs, immediately on individual serving plates.
