Eggs on a Savory Base
|Fresh bread crumbs||1 1⁄2 Cup (24 tbs)|
|Salt anchovies||1 , filleted, soaked in water for 30 minutes, drained, patted dry and chopped|
|Chopped fresh parsley||1 Tablespoon|
|Fresh chives||1 Tablespoon, finely cut|
|Shallot||1 , finely chopped|
|Egg yolks||6 , beaten|
1.In a skillet, heat 4 tablespoons of butter and put the bread crumbs in it and stir until the butter is totally absorbed.
2.Once done turn off the heat and add anchovy, parsley, chives, shallots and egg yolks in the skillet.
3.Take a heat proof gratin dish and put a layer of the mixture in it.
4.Cook on low flame for five minutes till the time mixture begins to firm.
5.Once firm, break the eggs on the top and add a pinch of salt and pepper.
6.Heat the dish in an oven or cook under the heated broiler.
