Eggs Benedict

Ingredients
  Eggs 6 , poached
  Thin ham slices 6 , trimmed
  English muffins 3 , halved, toasted and generously buttered
  Butter 1 Tablespoon (As Required)
  Madeira 1⁄2 Tablespoon
  Hollandaise sauce 1 Tablespoon (As Required)
  Paprika To Taste
  Fresh parsley sprig 2 (As Required)
Directions

MAKING
1) In a frying pan, saute the ham slices in a little butter, turnthe slices and drizzle over the Madeira, if used.
2) Place a ham slice over each muffin half, then lay a poached egg and spoon over the hollandaise sauce.
3) Sprinkle with the paprika to taste and garnish with fresh parsley sprigs.

SERVING
4) Serve the Eggs Benedict, immediately on individual serving plates.
