|Cooked potatoes||8 Ounce|
|Chopped parsley||1 Teaspoon|
|Salt||1⁄2 Teaspoon (Leveled)|
|Grated nutmeg||1⁄4 Teaspoon (Leveled)|
|Grated cheese||1 Ounce|
|Hard boiled eggs||4|
|Breadcrumbs||1⁄2 Cup (8 tbs)|
|Fat||2 Cup (32 tbs) (For Deep Frying)|
1. Mix the potatoes with the egg yolk and butter and add parsley, salt, nutmeg and cheese.
2. Divide into four portions and coat the hard-boiled eggs.
3. Roll in flour, then coat with egg and breadcrumbs.
4. Fry in deep fat until crisp and golden.
5. Serve hot with salad.
