Spinach Eggs

Ingredients
  Frozen chopped spinach 8 Ounce (1 Package)
  White breadcrumbs 4 Ounce
  Cheese 2 Ounce, grated
  Eggs 2 , beaten
  Seasoning To Taste
  Eggs 2 , boiled
  Butter 1⁄2 Ounce (100 G/4 Oz Dry White Breadcrumbs Fat For Deep Frying For The Sauce:)
  Flour 1⁄2 Ounce (100 G/4 Oz Dry White Breadcrumbs Fat For Deep Frying For The Sauce:)
  Milk 300 Milliliter (100 G/4 Oz Dry White Breadcrumbs Fat For Deep Frying For The Sauce:)
  Cheese 2 Ounce, grated (100 G/4 Oz Dry White Breadcrumbs Fat For Deep Frying For The Sauce:)
  Nutmeg 1 Teaspoon
  Tomato wedges 2
Directions

1 Cook the spinach according to the directions on the packet and drain thoroughly. Cool.
2 Mix together the breadcrumbs, cheese, beaten eggs and spinach. Season.
3 Using floured hands, coat the hard-boiled eggs with the spinach mixture. Dip in the beaten eggs and coat in breadcrumbs.
4 Deep fry until golden brown, drain on kitchen paper and keep warm.
5 To make the sauce melt the butter in a saucepan. Add the flour and cook, stirring continuously, for a few minutes. Stir in the milk and bring to the boil, then stir in the cheese and season.
6 Cook gently until the cheese has completely melted then add a generous pinch of nutmeg.
7 Cut the spinach eggs in half and arrange on a warmed serving dish. Pour over the sauce, sprinkle with a little nutmeg and garnish with tomato wedges.
