Ingredients
  Potato 1 Medium, baked
  Baked potatoes 1 Medium, cubed
  Green pepper 2 Tablespoon, chopped
  Chopped green pepper 2 Tablespoon
  Onion 2 Tablespoon, chopped
  Chopped onions 2 Tablespoon
  Garlic salt 1⁄4 Teaspoon
  Hot pepper sauce 1⁄4 Teaspoon
  Ground pepper To Taste
  Freshly ground pepper To Taste
  Margarine 1 Teaspoon
  Eggs 2
  Egg whites 2
  Water 2 Teaspoon
  Mozzarella cheese 1 Ounce, shredded
  Part-skim mozzarella cheese 1 Ounce, shredded (1/4 Cup)
  Tomato 1
  Tomato 1 , sliced
Directions

MAKING
1.Mix together green pepper, potato, onion, garlic salt, hot pepper sauce and pepper.
2. In a non stick pan, add margarine and saute for 2 minutes.
3.Beat together eggs, water and egg whites.
4. Gradually fold this into potato mixture.
5.Cook until set.
6. Top with cheese.

SERVING
7. Serve with sliced tomatoes.
