1 Separate the eggs
2 In a bowl beat the egg whites until stiff. Beat in salt and a little bit of pepper.
3 Add 2 tablespoons of water to the egg yolks and beat until thick. Fold the egg yolks in to the egg whites.
4 In an omelet pan heat the butter and pour the egg mixture with the help of a spoon.
5 Cook over moderate heat until the underside is golden.
6 Place under a hot broiler for a moment so that the top becomes slightly brown.
7 Add a savoury filling of your choice and fold the omelet in to half.
8 Serve immediately.
For a sweet omelet replace the salt and pepper with two teaspoons of sugar.
Add a few drops of vanilla essence to the egg mixture and follow the same procedure as above.
Spread a warm preserve or fruit puree before folding in to half .Sprinkle some sugar on top before serving.
