1 In a 2-quart casserole, cook butter, ham, and green onions 3 to 4 minutes, stirring every minute.
2 Add eggs, Tabasco, salt, and pepper; stir, to blend.
3 Cook, covered,for 3 to 4 minutes, stirring halfway through the cooking time.
4 Rest, covered for 5 minutes.
5 Serve immediately.
