Tomato And Egg Stir Fry

Ingredients
  Butter 15 Milliliter (1 Level Tablespoon)
  Tomato 1 , chopped into 16 pieces
  Chopped onion/Spring onions / chives 5 Milliliter (1 Level Teaspoon)
  Eggs 2 (At Room Temperature)
  Chopped fresh parsley/Thyme / marjoram / basil 5 Milliliter (1 Level Teaspoon)
  Freshly ground black pepper To Taste
  Bread roll 1
  Salt To Taste
Directions

1. Put the butter, tomato and onion into a small, shallow-sided, heatproof serving dish and microwave on HIGH for 2 minutes, loosely covered with cling film.
2. Stir gently, pushing towards the edges of the dish. Break in the eggs and stir quickly with a fork until the yolk and white are bubbly and well mixed. Microwave, uncovered, on HIGH for 2 minutes.
3. Gently stir the mixture from outside towards the centre. Microwave on HIGH, uncovered, for a further 1 1/4-1 1/2 minutes, stirring once from edges to centre.
4. Sprinkle with fresh green herbs and season to taste.
