Seven Minute Fluff
|Sugar||3⁄4 Cup (12 tbs)|
|Light corn syrup||1⁄3 Cup (5.33 tbs)|
|Cream of tartar||1⁄4 Teaspoon|
1) In the top portion of a double boiler, add egg whites, sugar, light corn syrup, water, cream of tartar and salt.
2) Bring the water to rapidly boil for cooking the mixture by beating a rotary egg beater, to form peaks.
3) Remove from heat and add vanilla. Keep on beating to get a thick and spreadable consistency.
4) Use the mixture to frost cooled cake and decorate.
If you overcook the frosting, a sugary texture will develop and if you undercook, it will become too soft and runny. The ideal time is about 7 minutes.
