Caldillo De Pescado

Ingredients
  Chopped onion 1 Cup (16 tbs)
  Garlic clove 1 Small, minced
  Oil 2 Tablespoon
  Water 1 1⁄2 Cup (24 tbs)
  Tomatoes 2 , sliced
  Potatoes 4 , quartered
  Celery rib 1 , sliced
  Oregano 1 Pinch
  Ground cumin 1⁄3 Teaspoon
  Salt 1⁄2 Teaspoon
  Paprika 1 Pinch
  Pepper 1 Dash
  White wine 1⁄4 Cup (4 tbs)
  Fish fillets 1 Pound
  Egg yolk 1 , beaten
  Chopped parsley 1 Tablespoon
Directions

MAKING
1) In a heavy pot, saute the onion and garlic in oil until soft.
2) Stir in all the ingredients except the fish, egg yolk and parsley; simmer covered for about 20 min, add the fish and simmer for further 15 min.
3) Remove 1/2 cup of the broth and stir it into the egg yolk, add this mixture into the pot, heat gently.

SERVING
4) Garnish with the parsley and serve immediately.
