Easter Egg Candy
|Hot mashed potatoes||1 Cup (16 tbs)|
|Shredded coconut||1 Cup (16 tbs)|
|Confectioners sugar||3 Pound (3 Boxes, 1 Pound Each)|
|Chocolate chips||8 Ounce (1 Package)|
Combine potatoes and butter; stir in coconut and vanilla.
Add sugar gradually, mixing well after each addition.
Form into egg shapes, using 1 tablespoon mixture for each egg; place on waxed paper.
Let harden for 1-3 days.
Melt chocolate over hot water, dip eggs into chocolate, using 2 spoons.
Place on waxed paper to harden.
Chopped nuts, candied fruits, or peanut butter may be used instead of coconut.
