Seasoned Fried Eggs
|Bacon fat/Drippings or butter||2 Tablespoon|
Heat the fat in a frying pan over low heat and break in the eggs.
Tip the pan slightly so that the eggs can be basted with the fat.
(Some people prefer the eggs cooked without basting—in this case, cover immediately with a lid.) Cook the eggs for about 3 minutes, basting several times until the whites set.
Season with salt and pepper.
Using a pancake turner, lift the eggs out of the fat, hold over the pan until any excess fat has run off and transfer to hot plates.
Serve at once.
If desired, the eggs may be turned over carefully during the frying, but do not attempt this until the eggs have begun to set.
