Omelette Au Grand Grand Marnier

Ingredients
  Eggs 3
  Grated orange rind 1 Tablespoon
  Orange segments 1 Tablespoon
  Sugar 1 Tablespoon
  Grand marnier 2 Tablespoon
  Butter 1 Tablespoon
Directions

Beat the eggs with the orange rind, half the sugar and the Grand Marnier.
Preheat the broiler to high.
Melt the butter in an omelet pan, and when it is hot, pour in the egg mixture and cook as for a French omelet.
When it is almost ready, put the orange segments on one half of the omelet, leave for 30 seconds, fold in half and turn onto a warm serving dish.
Sprinkle the omelet with the remaining sugar and glaze under the broiler for 30 seconds.
Serve at once.
