Old Time Wassail Bowl

Ingredients
  Baking apples 6
  Sugar 1⁄2 Cup (8 tbs)
  Whole cloves 2
  Ground cinnamon 1⁄2 Teaspoon
  Ground nutmeg 1⁄2 Teaspoon
  Grated lemon rind 1 Tablespoon
  Muscadelle 2 Quart
  Eggs 4 , separated
Directions

Core apples and peel down to about 1 inch from the stem end.
Fill cavities with the sugar and bake in preheated moderate oven (350°F.) for 30 minutes to 1 hour, or until tender but still firm.
Time will depend on kind of apples.
When done, stud apples with whole cloves.
Add ground spices and lemon rind to the wine and heat in top part of a double boiler over hot water.
Beat egg whites until stiff.
Then beat egg yolks until thick and lemon-colored.
Fold egg yolks into whites.
Put apples in bottom of wassail (punch) bowl.
Add egg mixture to wine and pour over apples.
Serve in warm mugs.
Makes 2 quarts, plus the apples.
