Anchovy Stuffed Eggs
|Hard-cooked eggs||8 , shelled|
|Anchovy fillets||8 , diced|
|Chopped fresh parsley||2 Tablespoon|
Cut the eggs in half.
Remove the yolks and put them into a bowl.
Mash the yolks with a fork, then add the mayonnaise, anchovies, capers and parsley.
Mix well and season to taste with salt and pepper.
Fill the eggs with the stuffing.
Chill for at least 30 minutes before serving.
