Eggs Florentine is a nice dish for a brunch. It is almost like egg benedict except that egg benedict is topped with ham and poached eggs and some hollandaise sauce. Eggs florentine can be called a perfect substitute of eggs benedict.
Ingredients
  English muffins 2
  Eggs 4
  Spinach and cream 4 Tablespoon
  Hollandaise sauce 4 Tablespoon
  Paprika 1 Teaspoon
Directions

1. Slice muffins and toast.
2. Put spinach cream over it followed with poached egg on each muffin.
3. Pour hollandaise sauce and paprika.
4. Serve.
