Scrambled Eggs With Tomato

Ingredients
  Eggs 8 Small
  Butter 60 Gram
  Milk 30 Milliliter
  Salt To Taste
  Pepper 1⁄4 Teaspoon
  Tomatoes 450 Gram
  Chopped onion 30 Gram
  Fat 30 Gram
  Parsley sprigs 3
Directions

1. Prepare scrambled eggs.
2. Blanch tomatoes. Cut into halves. Remove seeds.
3. Chop roughly.
4. Heat fat. Saute onion without discolouration.
5. Add the tomatoes and season.
6. Simmer over a gentle heat till moisture is evaporated.
7. Serve eggs in individual dishes. Place a spoonful of tomato in the centre of each dish of egg and a little chopped parsley on top of the tomato.
