Spinach Feta and Potato Omelette
|Olive oil||2 Tablespoon|
|Cooked new potatoes||6 , sliced|
|Frozen spinach||5 Ounce, defrosted and drained (140 Gram)|
|Garlic||1 Clove (5 gm), chopped|
|Feta||4 Ounce, crumbled (100 Gram)|
1. Heat grill to medium. Beat eggs with some salt and pepper. Heat the oil in a non-stick frying pan, add the potatoes, then fry until golden. Add spinach and garlic, then heat through.
2. Reduce heat, scatter over feta, pour in eggs, then cook until just setting on top, 12-15 mins. Slide under the grill to brown.
