Aubergines A La Turque
|Oil||2 Cup (32 tbs) (For Deep Frying)|
|Refined flour||15 Gram|
1. Cut aubergine lengthwise into thin slices.
2. Season and fry these slices in oil.
3. Pair them off and join them together by means of a very firm preparation of raw egg yolk and grated cheese.
4. When ready to serve, dip them in a batter and deep fry in smoking oil.
5. Serve hot.
