Hard Cooked Eggs Florentine
|Spinach||1⁄2 Pound, washed, stems removed|
|Hot water||1 Cup (16 tbs)|
|Mayonnaise||1 1⁄2 Cup (24 tbs) (Preferably Homemade)|
|Chopped parsley||3 Tablespoon|
|Hard-cooked eggs||6 , shelled|
Wilt spinach by soaking in hot water 5 minutes.
Drain well and mince.
Combine with mayonnaise and parsley, mixing well.
Halve eggs lengthwise and place cut side down on individual serving plates.
Cover with mayonnaise mixture and chill before serving.
Garnish with watercress sprigs.
