There are two ways of cooking scrambled eggs.
In the first method melt half the butter in a pan without letting it get brown.
In the second method spread half the butter over the base of the pan with fingers.
Add eggs, salt and pepper.
Cook slowly and with a metal spoon scoop cooked eggs from base and sides of the pan.
The mixture should not be mashed.
Add remaining butter in bits.
Add cream or milk and remove from fire.
Continue to scoop eggs till just set and soft.
A simpler method is to melt all the butter without browning, add beaten eggs and seasoning and scramble.
