|Soy sauce||1⁄2 Teaspoon|
|Celery||1 Cup (16 tbs), thinly sliced|
|Bean sprouts||1 Cup (16 tbs), chopped|
|Scallions||1⁄2 Cup (8 tbs), chopped|
|Cooking oil||2 Tablespoon|
Beat eggs with salt and soy sauce.
Heat oil in skillet; pour in egg mixture and cook slowly until almost set.
Cut into quarters and turn; cook for about 3 minutes.
