Tasty Eggs Florentine
|Chopped cooked spinach||2 Cup (32 tbs)|
|Grated cheese||1⁄2 Cup (8 tbs)|
|Heavy cream/Evaporated milk||1 Cup (16 tbs)|
1. Start oven, set at Moderate, 350° F. Rub 4 custard cups or ramekins with margarine.
2. Season the spinach with the butter or margarine and half the salt. Put 1/2 cup spinach in each cup. Sprinkle with some of the cheese.
3. Slip 1 egg on top of the spinach in each cup. Pour 1/4 cup cream or evaporated milk over each egg, and sprinkle with the rest of the cheese and the salt.
4. Bake about 15 minutes, or until the eggs are set.
