Blue Cheese Eggs

Ingredients
  Onion 1 Medium, chopped
  Margarine/Butter 2 Tablespoon
  Eggs 8 , slightly beaten
  Milk 1⁄2 Cup (8 tbs)
  Finely crumbled blue cheese 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Bacon slices 8 , crisply fried and crumbled
Directions

Cook and stir onion in margarine in 10-inch skillet over medium heat until onion is tender.
Mix eggs, milk, cheese, salt and pepper; pour into skillet.
As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom.
Avoid constant stirring.
Cook until eggs are thickened throughout but still moist, about 5 minutes.
Stir in bacon.
Microwave Directions: Place onion and margarine in 2-quart microwaveproof casserole.
Microwave uncovered on high (100%) until onion is tender, 3 to 4 minutes.
Mix eggs, milk, cheese, salt and pepper; pour into casserole.
Microwave uncovered, stirring every 2 minutes, until eggs are set but still moist, 6 to 8 minutes.
Stir in bacon.
