Egg White Batter

Ingredients
  Flour 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Water 3⁄4 Cup (12 tbs)
  Olive oil 2 Tablespoon
  Egg whites 2
Directions

Combine flour and salt and blend in water and oil with rotary beater until batter is smooth.
Let stand a couple of hours.
Beat egg whites until stiff.
Fold into batter about 5 minutes before frying vegetables.
