Easter Eggs

Ingredients
  Mashed potatoes 1 Cup (16 tbs), cooled
  Butter/Margarine 1⁄2 Pound
  Confectioners sugar 4 Pound
  Vanilla extract 2 Tablespoon
  Chocolate chips 12 Ounce (1 Package)
  Paraffin 1 Tablespoon (For Canning And Cooking)
Directions

1. Blend mashed potatoes, butter, sugar, and vanilla. As a variation, add: nut-meats, coconut, 1/2 cup peanut butter, or chopped maraschino cherries, to rilling.
2. Put filling mixture on table and knead until smooth and satiny. Roll into long roll. Cut off pieces and mold into an egg shape with a large tablespoon. Place each egg on a platter or in a container, covered with waxed paper. Chill for 1 hour.
3. While eggs are chilling, put 1 package chocolate chips and 1 tablespoon paraffin in the top of a double boiler. Warm until thoroughly melted, stirring slowly.
4. Dip chilled eggs into warm chocolate, drain, and let harden on waxed paper. Refrigerate till serving.
